Appetizer Course – Baked Brie
Triple cream miniature half-moon baked brie served with exotic fruits. Accompanied by: Josh Cellars, Prosecco Rosé  

Fish Course: North Atlantic Halibut
Poached halibut medallion in aromatic lemon grass Consommé. Topped with maple wood cured bacon planks and parsley carrot ribbon. Accompanied by: The Calling, Chardonnay Dutton Ranch 2018

Entree Course: Wagyu Beef Short Rib
Slow braised “spider web marbled” Wagyu beef short ribs finished with triple reduced Cabernet demi-Glace. Accompanied by caramelized fennel and shallot ragout and vanilla polenta. Accompanied by: Joseph Carr, Cabernet Sauvignon Napa Valley 2018

Dessert: Fried Chocolate Bites
Double chocolate brownies in bite size cubes, breaded with sweetened cocoa powder and flash fried. Served with toasted pecan caramel sauce and vanilla cream. Accompanied by: Girard Winery, Artistry Napa Valley 2018
