Dry rubbed, seared and slow roasted North American buffalo
tenderloin. Served on Yukon gold smashed potatoes. Finished with exotic mushroom demi-glace flavored with fresh sage.. Accompanied by 2015 BV Tapestry Reserve.
Chocolate Truffle Cake
Dense fudge like flourless cake served on a plate painted with blackberry, raspberry, black cherry coulis. Finished with pistachio flavored whip cream. Accompanied by a Comparison of 2015 BV Cavernet Sauvignon, Rutherford.
